They are large in size, and are the most intense of the mustard seeds. They have a spicy & earthy flavor; astringent, sharp and pungent but also a balanced taste and aroma that is released when toasted or ground. They are less bitter than yellow or brown mustard seeds. Typically tempered in oil to make them sweeter and nuttier.
