Nameko mushrooms are Japanese mushrooms
aka 'butterscotch mushrooms' in the USA.
These small bright orange mushrooms with
slender, straight stems and smooth, round
caps, and have a soft, silky texture (when
rehydrated) and a sweet, nutty flavor. Caps
display a glossy sheen due to a natural
gelatin coating, and when cooked, these
coating melts away, acting as a natural
thickener for soups, stews and sauces.
Roast or grill to enhance their nutty aroma
and umami flavor, add to stir-fries or sautees,
add to miso soup, toss in pasta, noodle dishes,
Reconstitute: Rinse and soak in boiling water
for 10-15 min or until desired texture. Drain,
reserving the thickened liquid for another use.
