Rapadura (cane sugar in 'Portuguese', ‘Panela’ in Spain) sugar is prepared in Central and Latin America by boiling unrefined whole sugar cane juice until all the moisture is evaporated, retaining its molasses. Then dehydrated at a low heat to get grainy texture and preserving the natural caramel taste of the sugar, deeper & richer flavor, retaining most of its essential nutrients, vitamins and minerals.
