Pearl millet is the oldest cultivated grain, and widely grown type of millet. Rich in fiber and
contains essential proteins, vitamins & mineral. It improves digestion and manages diabetes,
and detoxifies the body. Used as a staple food in India and used to make pilaf or porridge, or processed to make phoha or umpa or snacks or grounded in flour to make breads or chapatis.
How to cook Pearl Millet: Wash & rinse 1 cup millet, Soak for 15min., add 2½cup water and bring to a boil, Add salt and ghee (if desired), cover with tight fitting lid. Reduce heat to low, simmer for 15-20 min. or until grain are cooked, soft & fluffy. Serve warm.
1 cup millet yields 4¼ cups cooked millet.
