Pearl sugar also known as Belgian Pearl sugar, is a extremely hard & irregular grain crystal sugar. It doesn’t melt easily when exposed to moisture or to high heat (can withstand baking temperatures). Mix it into some cookie dough for a little crunch or sprinkle it on top of a cake, the Pearl sugar will stay put, very visible as you bake and will produce unique decorative effects and pleasant textures.
