This Extra-large, flat, cream colored Lima bean, native to Northern Peru. When cooked has a creamy, meaty texture and savory flavor. Their size and heartiness makes it great for stewing, as they hold their shape. Excellent choice for soups or to make a creamy puree.
Basic preparation: Wash, rinse & soak overnight. Add 4 Cups of water / Cup of Bean, bring to boil. Reduce heat and simmer covered for 60-90 minutes or until tender (add more water as needed). Whisk lightly to remove the floating foam while cooking.
Yield: 2 1/4 cups of cooked beans / Cup of dry beans
