Polenta-Hotevilla Pink (Stone Milled & Parched)

This coarse ground, stone milled whole grist Hotevilla Pink Corn ("parching corn"),is a native Hopi corn-the seed grownr by a resident of the village of Hotevilla, Arizona. The parching adds sweetness to this corn, and a delicious flavor to this polenta.

It provides a creamy, delicious flavor perfect for hot cereals and casseroles.

Recipe for pink Polenta: Mix 3 parts water to 1 part polenta & bring to a slow boil-stirring frequently. Remove from heat & pour into a shallow pan. Cool & refrigerate overnight.
