‘Satay’ is known as a signature dish of Indonesian cuisine, the perfect local “fast food of marinated, skewered, grilled Chicken, Meat or Fish.
Garlic, Onion, Coriander, Orange Peel, Lemongrass, Turmeric, Smoked Paprika, Ginger, Salt, Chipotle Chili, Cayenne.
Simple recipe for grilling Chicken with satay seasoning:
In a saucepan make a satay sauce by heating 2tsp peanut oil and 2tsp soft gula melaka (palm sugar), stirring constantly ( may add a little water while stirring), add 6tbsp peanut butter, keep stirring until all the ingredients are heated through. Keep aside.
Sprinkle 3tbsp satay spice mix on 2lbs chicken thigh, cut in cubes, add salt to taste. Let sit in the refrigerator for 2 hours or overnight. Put the marinated chicken onto the Bamboo skewers (soaked in water for 30 minutes), sprinkle few drops of fresh squeezed lemon juice. Keep aside. Pre heat the grill to a medium heat. Grill the chicken pieces, basting with satay sauce and flipping every 2-4 minutes, cook until the chicken is cooked and tender. Serve with a topping of satay sauce
