This spicy seasoning is made from chickpea flour seasoned with Berbere (a chili pepper
spice blend), and aromatic notes from ginger, garlic, and onions, giving it its characteristic rich, earthy, and spicy flavor. Used to make a ‘Shiro Wot’, a popular high-protein staple
Ethiopian dish during special occasions & fasting seasons, served with 'Injera flatbread'. Can be added to vegetable soups, stews, dips or sauces to add flavor and as a thickening agent.
Ingredients:
Berbere, Garbanzo, Ginger, Garlic, Black Cumin, Cardamom, Salt.
Simple recipe to make ‘Shiro Wot’:
In a pot heat 1 cup olive oil add 1 cup chopped red onion, and 3 cloves of chopped garlic, sauté until brown (3-4 min.), add 2tsp ‘Berbere seasoning, simmer a few minutes, then add 2 cups of water and bring to a boil, whisk in 1 1/2 cups ‘Shiro Mitin’ powder a teaspoon at a time, stirring to prevent lumps. Add more water or oil as needed and continue cooking, add water or oil to smooth it out if it’s getting too lumpy or thick. Let cook on low heat until it becomes thick but smooth (15-20min.), more like a stew. Stir in salt to taste. Serve hot with Injera bread.
