Spicy Ethiopian Seasoning

‘Mitten Shiro’ is made from peas, lentils, and chickpeas that are dried and ground into a fine powder, with spices added to it. The flavor is rich, spicy and nutty and used to make a popular Ethiopian dish called ‘Shiro Wat’, an Ethiopean & Eritrean stew, a favorite dish during special occasions, including Lent, Ramadan and other fasting seasons.

Ingredients:
Berbere, Garbanzo, Ginger, Garlic, Black Cumin, Cardamom, Salt.
Simple recipe to make ‘Shiro Wot’:
In a pot heat 1 cup olive oil add 1 cup chopped red onion, and 3 cloves of chopped garlic, saute until brown (3-4 min.), add 2tsp ‘Berbere seasoning, Simmer a few minutes, then add 2 cups of water and bring to a boil, whisk in 1 1/2 cups ‘Shiro Mitin’ powder a teaspoon at a time, stirring to prevent lumps. Add more water or oil as needed and continue cooking, add water or oil to smooth it out if it’s getting too lumpy or thick. Let cook on low heat until it becomes thick but smooth (15-20min.), more like a stew. Stir in salt to taste. Serve hot with Injera bread.
