Sorbic Acid is an organic compound acts as an antimicrobial agents and mold inhibitor. Often used as preservatives in wide range of processed foods to prevent the growth of mold, bacteria, yeast and fungi. *
It is also used in processed meats as an alternative to preservation using nitrites. Sorbic Acid is soluble in fats, oils and some solvents but virtually insoluble in water. Sorbic acid is added in small amounts, shall not be more than 1.0 g/kg. *
