It mixes more quickly and easily, eliminating powder lumps or air bubbles, agglomerated to minimize dust and maximize ease of handling, short hydration period.
Simply mix 1gm of alginate per 100ml of liquid for making perfect "caviar" or "ravioli". Works with Calcium Chloride for direct spherification and Calcium Lactate or Calcium Lactate Gluconate for reverse spherification.
Sub 1:1 for sodium alginate in any recipe.
