Functions as general thickener and stabilizer in pies and other bakery applications
Simply mix 1g of Sphere Magic per 100ml of liquid for making perfect "caviar" or "ravioli".
Works with Calcium Chloride for direct spherification and for reverse spherification use either Calcium Lactate or Calcium Lactate Gluconate.
