Our Blue Star® Mochiko Sweet Rice Flour is hypoallergenic and often used in specialty food manufacturing. Produced and cold-rolled milled on our farm since the 1940s, Blue Star Brand® Mochiko Sweet Rice Flour is composed of California farmed, pure, unadulterated short grain sweet rice, no additives of any sort. Mild and neutral in flavor, with superior thickening qualities, our flour is useful for certain applications in gluten-free baking/cooking. In mainstream applications, it was traditionally it was utilized as a sauce thickening alternative to corn starch. Contemporary applications include microwave mochi.
