Granulated tapioca, also known as â€˜Quick Cooking Tapiocaâ€™, sometimes called â€œManioca,â€ is produced by grinding flake tapioca. Instant granulated tapioca can withstand prolonged cooking and freezing, and gives the fillings an attractive glossy sheen. When cooked, tapioca does not dissolve but swells into a pale, translucent jelly. Granulated tapioca is a healthier thickening alternative to cornstarch and flour.
Tapioca is often confused with â€˜Sagoâ€™, which is actually the sap of the sago palm, a different species than Tapioca.
