It is ultra-fine pure cellulose gum, used to improve the strength and elasticity of fondant and gum paste. It makes gum paste last longer, help drying out the fondant quickly, makes fondant dry really hard (harder than when Gum Tragacanth is used).
Easily be used in a pinch for making edible figures and flowers for cakes and other baked items. It helps prevents fat from migrating to the surface to spoil the gum paste. Improves freeze/ thaw capabilities, resists humidity and prolongs shelf life.
To Create Gum paste: Add 2-3 tsp to 1LB of Fondant.
