The West Indian bay leaves (Pimenta racemosa) are dried fresh sweet bay leaf of Caribbean ‘bay rum tree’.Leaves are more fragrant and aromatic than other known bay leaves, and has intense sweet flavor and characteristic odour with hints of clove and cinnamon.
Use in cooking rice dishes, soups and stews.On distillation the leaves yield an essential 'myrcia oil' or fragrant 'Bay Rum cologne'.
