Durum Wheat berries, are hardest type of wheat, selected from domesticated emmer wheat strains. It has high protein content and gluten strength. Usually grounded to make yellow semolina flour and to make pasta.
Durum flour often combined with all purpose or bread flour, used in making specialty breads such as chapatti bread, pitas, roti bread, or “Italian Style” breads, or a crispy pizza crust.
