White Corn Kernels (Not Treated with Lime)

White corn is dried whole-kernel corn, creamy white in color & with a chewy, soft texture when cooked. It has a toasted, earthy-sweet flavor. Prepare cooked kernels like creamed corn for a unique variation on a classic dish. Kernels can be ground to produce varying grades of white cornmeal or polenta.

Basic Preparation: Soak 1 cup dried corn in 2 cups water for at least 2 hours or overnight. Do not drain. Cover and bring to a boil. Reduce heat to simmer and cook 60 minutes until tender. Store in a dry and cool place.
