These often neglected and rarely seen small,
slender brown mushrooms up to 3" across,
with a slender, usually hollow stem, colored
yellow at the base found in Cascades and on the
coast. Yellow Foot chanterelle mushrooms have
a subtle, fruity aroma and a smoky, peppery
flavor when raw, but when cooked, they
taste exquisite and are versatile. Its flavor and
silken texture, is especially good braised
with meat.
