This traditional seasoning for Georgian meat & rice soup, containing beef/lamb, rice and chopped English walnut.
Ingredients: Garlic, Fenugreek, Coriander, Paprika, Caraway, Chili Pepper, Black Peppercorn, and Savory.
Note: May add some blue Fenugreek powder to the recipe for added Georgian flavor.
Simple recipe for Kharcho – Georgian Beef-Walnut Soup: Bring 2 pounds beef, cut into 1/2” cubes, to a boil in 2 quarts of water, add salt to taste, boil the meat on medium for 40 minutes, skim the foam as it rises. Add 1/2 cup of well-rinsed rice, cook for 60 minutes, stirring occasionally. In a frying pan fry 1 large chopped onion until turn golden then add to the soup. Add ¼ cup sour pomegranate juice, some crushed walnut, 2tbsp Kharcho Spice Mix, 1tsp Blue Fenugreek Powder, 6 crushed garlic cloves, simmer for 5 minutes. Let soup stand for 10 minutes. Before serving, garnish with 2tbsp chopped parsley or cilantro leaves.
