I often prepare Lentil soup, both vegetarian and non vegetarian with a Ham Hock and stock. In this preparation the Lentil need to retain their structure and have a distinct taste which I have found older and poor lentils do not. I will always be using the Kalustyans Lentils going forward to be safe since they worked so well this past time.
